Description
A colorful, protein-packed, and family-friendly one-pan dinner ready in just 30 minutes! Perfect for meal prep or weeknight meals.
Ingredients
12–16 oz smoked turkey or chicken sausage (about 3 cups), sliced into 1″ rounds
2 cups sweet potato, diced into ½-inch cubes
2 cups broccoli florets
1 cup bell pepper, chopped (any color)
2 cloves garlic, minced
2 tablespoons olive oil
1 tablespoon Italian seasoning (or taco, Cajun, or your favorite blend)
½ teaspoon salt
½ teaspoon black pepper
Instructions
-
Preheat your oven to 400°F (200°C).
-
Slice the sausage and dice the sweet potatoes into uniform pieces for even cooking.
-
On a large sheet pan, combine sausage, sweet potato, bell pepper, broccoli, and garlic.
-
Drizzle with olive oil, then sprinkle on seasoning, salt, and pepper. Toss everything by hand or spatula until coated.
-
Spread ingredients evenly across the sheet pan—no overlapping.
-
Roast for 20 minutes, flipping halfway through, until veggies are tender and edges are golden brown.
-
Serve warm with your choice of side—rice, quinoa, or enjoy as-is!
Notes
-
Use precooked smoked sausage for faster roasting.
-
Add veggies like zucchini, red onions, or cherry tomatoes for variety.
-
Try different seasoning blends like Cajun, taco, or curry powder.
-
For a crispier finish, broil the last 2–3 minutes.
