Ingredients

1216 oz smoked turkey or chicken sausage (about 3 cups), sliced into 1″ rounds

2 cups sweet potato, diced into ½-inch cubes

2 cups broccoli florets

1 cup bell pepper, chopped (any color)

2 cloves garlic, minced

2 tablespoons olive oil

1 tablespoon Italian seasoning (or taco, Cajun, or your favorite blend)

½ teaspoon salt

½ teaspoon black pepper


Instructions

  1. Preheat your oven to 400°F (200°C).

  2. Slice the sausage and dice the sweet potatoes into uniform pieces for even cooking.

  3. On a large sheet pan, combine sausage, sweet potato, bell pepper, broccoli, and garlic.

  4. Drizzle with olive oil, then sprinkle on seasoning, salt, and pepper. Toss everything by hand or spatula until coated.

  5. Spread ingredients evenly across the sheet pan—no overlapping.

  6. Roast for 20 minutes, flipping halfway through, until veggies are tender and edges are golden brown.
