1/2 cup vegetable oil
2 large eggs
2 teaspoons vanilla extract
1 cup hot coffee
1 1/2 cups heavy cream
2 cups semi-sweet chocolate chips
2 tablespoons unsalted butter
1/2 cup unsweetened cocoa powder
3/4 cup granulated sugar

Instructions
- Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
- In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- Add buttermilk, vegetable oil, eggs, and vanilla extract to the dry ingredients and mix until combined.
- Slowly incorporate hot coffee into the batter, mixing until smooth.
- Pour the batter evenly into the prepared pans and bake for 30-35 minutes or until a toothpick comes out clean.
- Let cakes cool in the pans for 10 minutes before transferring to wire racks to cool completely.
- For the ganache, heat heavy cream until simmering, then pour over chocolate chips and butter; let sit for a few minutes before stirring until smooth.
- Frost the cooled cakes with ganache, and if desired, drizzle with extra fudgy chocolate sauce.
Notes
For a richer flavor, use high-quality cocoa powder. The coffee enhances the chocolate taste without making the cake taste like coffee.
