Ingredients

2 cups granulated sugar

3/4 cup unsweetened cocoa powder

1 1/2 teaspoons baking soda

1 teaspoon salt

1 cup buttermilk (or 1 cup milk + 1 tbsp vinegar)

1/2 cup vegetable oil

2 large eggs

2 teaspoons vanilla extract

1 cup hot coffee

1 1/2 cups heavy cream

2 cups semi-sweet chocolate chips

2 tablespoons unsalted butter

1/2 cup unsweetened cocoa powder

3/4 cup granulated sugar

1/2 cup heavy cream

1/4 cup unsalted butter

1 teaspoon vanilla extract


Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add buttermilk, vegetable oil, eggs, and vanilla extract to the dry ingredients and mix until combined.
  4. Slowly incorporate hot coffee into the batter, mixing until smooth.
  5. Pour the batter evenly into the prepared pans and bake for 30-35 minutes or until a toothpick comes out clean.
  6. Let cakes cool in the pans for 10 minutes before transferring to wire racks to cool completely.
  7. For the ganache, heat heavy cream until simmering, then pour over chocolate chips and butter; let sit for a few minutes before stirring until smooth.
  8. Frost the cooled cakes with ganache, and if desired, drizzle with extra fudgy chocolate sauce.

Notes

For a richer flavor, use high-quality cocoa powder. The coffee enhances the chocolate taste without making the cake taste like coffee.
