Instructions

Preheat oven to 350°F (175°C). Grease an 8-inch square baking pan.

In a large bowl, beat together flour, sugar, butter, and salt until well mixed.

In a separate bowl, whisk eggs, lemon juice, and lemon zest.

Pour egg mixture into the flour mixture and beat on medium speed until smooth (about 3 minutes).

Pour batter into prepared pan and smooth the top.

Bake for 23–25 minutes, or until a toothpick inserted comes out clean. Let cool in pan.
