Description

Lemon Brownies

  • ¾ cup all-purpose flour

  • ¾ cup white sugar

  • ½ cup unsalted butter, softened

  • ½ teaspoon sea salt

  • 3 large eggs

  • 2 tablespoons lemon juice

  • 1 tablespoon lemon zest

Lemon Glaze

  • 1 cup confectioners’ sugar

  • ¼ cup lemon juice (or to taste)

  • ¼ teaspoon vanilla extract

  • Extra lemon zest (optional


Instructions

  • Preheat oven to 350°F (175°C). Grease an 8-inch square baking pan.

  • In a large bowl, beat together flour, sugar, butter, and salt until well mixed.

  • In a separate bowl, whisk eggs, lemon juice, and lemon zest.

  • Pour egg mixture into the flour mixture and beat on medium speed until smooth (about 3 minutes).

  • Pour batter into prepared pan and smooth the top.

  • Bake for 23–25 minutes, or until a toothpick inserted comes out clean. Let cool in pan.

  • For the glaze, whisk together confectioners’ sugar, lemon juice, vanilla extract, and zest until smooth.

 

  • Spread glaze over cooled brownies. Let set before cutting into squares.

Notes

  • Zest the lemon before juicing.

  • Glaze can be adjusted for tartness or thickness.

 

  • For extra lemon flavor, add a few drops of lemon extract.
