Description
A luxurious twist on classic tiramisu, this Cherry Amaretto Tiramisu combines layers of boozy cherries, creamy mascarpone, espresso-soaked ladyfingers, and cocoa. A perfect dessert for special occasions or romantic evenings.
Ingredients
1 pound fresh cherries, pitted and halved
1/4 cup Amaretto liqueur
1 tablespoon sugar
16 ladyfingers
8 oz mascarpone cheese
1 cup heavy cream
1/4 cup powdered sugar
1 teaspoon vanilla extract
1/2 cup brewed espresso, cooled
Cocoa powder, for dusting
Shaved dark chocolate (optional)
Instructions
-
- Macerate the cherries: In a bowl, combine the halved cherries, Amaretto, and sugar. Stir and let sit for 30 minutes to release their juices.
- Prepare mascarpone cream: In a large bowl, whisk together the mascarpone, powdered sugar, and vanilla until smooth.
- Whip the cream: In another bowl, whip the heavy cream until stiff peaks form. Gently fold it into the mascarpone mixture to keep it light and fluffy.
- Dip the ladyfingers: Quickly dip each ladyfinger into the cooled espresso (don’t soak), then layer them in a 9×9-inch dish.
- Assemble the layers: Spread half of the mascarpone mixture over the ladyfingers. Spoon half of the macerated cherries (with some juice) over the cream.
- Repeat: Add another layer of dipped ladyfingers, remaining cream, and the rest of the cherries.
- Dust and chill: Dust the top with cocoa powder and sprinkle with shaved dark chocolate if desired. Cover and refrigerate for at least 4 hours or overnight for best results.
Notes
For a non-alcoholic version, replace Amaretto with cherry juice and 1/2 tsp almond extract.
